The Heart of Our Coffee: Our Milling Plant

At the core of our operations stands our milling plant, the vital nexus where the journey of the coffee cherry transforms into the green coffee bean. This is where generations of expertise meet modern technology, ensuring that the unique characteristics cultivated on the farm are preserved and refined.

Our milling process is a meticulous two-stage journey, designed to protect the integrity of the bean and unlock its full flavor potential

Phase 1:
The Wet Milling Process

Immediately after harvesting, the coffee cherries are delivered to our milling plant for the critical wet milling stage. This process is essential for producing the clean, bright flavors that define high-quality Kenyan coffee.

Washing & Grading

  • Pulping: The cherries are first passed through a pulper to remove the outer skin, leaving the bean encased in its parchment and mucilage layer
  • Fermentation: The pulped coffee is then carefully fermented in water tanks. This natural process breaks down the sugary mucilage, developing the complex flavors and acidity that will later be found in the cup.
  • Washing & Grading: After fermentation, the coffee is thoroughly washed to remove all remaining mucilage. During this stage, the beans are graded by density, with the highest quality beans separating from the rest. This ensures that only the best beans proceed to the next stage.

Phase 2:
The Dry Milling Process

Once the coffee has been carefully sun-dried, it is ready for the second stage: dry milling. This is a crucial step in preparing the coffee for export and ensuring consistency in every lot.

Electronic Sorting

Hand Sorting & Grading

  • Hulling & Polishing: The coffee, now known as "parchment coffee," is hulled to remove its brittle, papery outer layer. The beans are then polished to remove any remaining silver skin.
  • Electronic Sorting: We utilize advanced electronic color sorters to ensure every bean meets our rigorous quality standards. These machines precisely identify and remove any defective or discolored beans.
  • Hand Sorting & Grading: Even with modern technology, the human touch remains irreplaceable. Our skilled team performs final hand sorting to meticulously inspect each bean. The beans are then graded by size, density, and shape to create uniform lots for our clients.

Inoi Farmers Cooperative Society (FCS Code 0417) is located in Kirinyaga Central Subcounty within Kirinyaga County and was established in 1954. The society operates at an altitude of approximately 1400 meters above sea level and comprises 11 factories, serving a total of 6,117 farmers. The region is characterized by loam soil and relies primarily on rivers as its main water source. The area experiences a cool to warm, humid, and rainy climate, with annual rainfall ranging between 1200mm and 1700mm. The main coffee picking season runs from October to December.
